Date Night and My First Stampin’ Experience
My husband and I have a little tradition. Every Tuesday is date night, we try a new recipe, a new bottle of wine and we listen to a new artist. This little tradition has become sorta a big deal for us. It is absolutely my favorite night of the week. Last night we made Roasted Tomato and Vegetable Soup. Don’tcha just love hot soup on a cold night? Cozy, right? Mostly our date nights consist of us throwing around hypotheticals about babies and our boy Goose drooling at the end of the table. Last night had a slight twist.
I headed upstairs mid carrot chop. “Where are you going honey?” “Noooo where” “You’re getting your new camera, aren’t you!” “Maayybee” So I proceed to document our date night, see below. Annnd, here’s a little something extra for ya, the recipe. This little ditty goes together pretty fast and pretty easy. I never follow recipies exactly, so this is my version.
Ingredients:
1 tablespoon oil olive
1 medium onion, chopped
1 celery stalk, sliced
1 medium carrot, chopped
1 teaspoon garlic, minced
32 ounces of vegetable broth
2 cans of tomatoes, 1-fire-roasted, 1-diced, undrained
1 can white kidney beans, rinsed and drained
1 small zucchini, halved lengthwise and sliced
1 cup(s) broccoli florets
Oregano, salt and pepper to taste
Instructions: In a large pot, heat oil over medium heat. Add onion, celery, carrots, and garlic; cook for 5 minutes. Stir in broth (You can use chicken broth if you’re not a veggie-saurus like me), and tomatoes. Bring to boil then reduce heat. Cover and simmer for 10
-20 minutes. Add everything else; cook for 5 minutes more.
Done and done, dinner is ready (plus dinner for a few nights because this recipe makes a lot).
Okay, on to really important stuff. Have any of you ever been to a Stampin’ Up party? This has nothing to do with clogging, step dancing or anything related as I found out. It was even better… CRAFTS! I am crazy about crafts, scrapbooking, home decorating, and things of that nature and this Stampin’ Up stuff is right up my alley. My Mom and I went on Monday night and we got to make 10, count’em 10, gorgeous greeting cards. It was a lot of fun and I learned some really cool new techniques.
